A Farmstead Favorite

Posted by christina on 08/23/2011

At MIHO, we make it our mission to thoughtfully source ingredients that are produced by local farmers and artisans who share our love of food. It is without a doubt that an ingredient such as Point Reyes Bleu Cheese, which we are featuring on our Bloody Mary Burger, is exceptionally delicious because its producers are truly passionate about its quality and craftsmanship.

A few years back, I got to visit the Giacomini’s farm in Point Reyes Station, CA, and I was amazed at what a great operation it was. Their product, Point Reyes Bleu Cheese, is a farmstead cheese, meaning every step in the production process occurs on the farm’s property. Milking begins in the wee hours of the morning and is then pumped into the cheese production facility next door. There, penicillium Roqueforti (the mold that creates the blue streaks) is added to the milk, along with natural enzymes and salt to create the cheese we know and love.

If you ever get up to the Bay Area, I strongly urge all of you HOMI’s out there to get out to the farm to visit the Giacomini’s. You’ll be treated to a wonderful view of Tomales Bay, but best of all, you’ll get to meet a producer who truly does it for the love of the food.

Purple People Pleaser

The late summer harvest from Suzie’s Farm has brought beautiful eggplants into our kitchen and we’re featuring them this week in our Eggplant Caponata Tart. In our tart, you’ll find sauteed eggplant and onions, feta cheese, almonds and cranberries, all wrapped inside a golden, flaky, hand made pastry. Paired with a mixed green salad, this dish is light, refreshing, and most importantly, totally tasty.

Eggplants are quite popular around the world and have been in the states for over 500 years. Originally cultivated in India, these fruits belong to the same family as tomatoes and potatoes. They are most commonly known to come in a deep shade of purple, although some varieties can be found in albino form. Interestingly enough, the eggplant is richer than any other edible plant in nicotine, which is found inside of its small seeds.

We’ll have hot, fresh tarts coming out of the ovens all this week, and we’ve got one with your name on it. Come say “hi” and grab a bite. And as always, we look forward to seeing you on the street.

Fleur Delicieux

Abundant sunshine means abundant produce and our farm friends are hard at work tending and harvesting the summer’s best, including gorgeous edible flowers. On this week’s menu, we’re bringing them to you in one of our prettiest dishes yet – the Flower Blossom Salad. Suzie’s Farm has provided us with a gorgeous medley of flowers that we are serving atop beautiful mixed greens, dressed in a house made orange vinaigrette.

Flowers are used in nature to attract pollinators such as bees to the plant. Their vibrant colors and inherent sweetness are irresistible to both humans and animals alike. Each plant produces it’s own unique flower with it’s own distinctive flavor, and we’ve got quite the bouquet on our salad. From the vegetable family, we’ve got bright, orange squash blossoms that lend a lightened taste of the mature squash. From the herb family, we’re using lavender flowers, purple Thai basil flowers, and borage, a blue, star shaped flower with a sweet, honey-like flavor.

These blooming beauties are only on display for a limited time, so come visit us for lunch this week and try out a dish that is surely as beautiful as it is delectable. See you on the street!
