Berry Delightful

Posted by christina on 06/27/2011

Tis’ the season for bright, beautiful berries and our friends over at Crows Pass Farm have yet again managed to spoil us with some of the best berries we’ve ever tasted. This week we’re dishing out a delicious Raspberry Almond Salad featuring those fresh picked berries, Oregon bleu vein cheese, and a hand made poppy seed vinaigrette.

Raspberries are unique in that they are an aggregate fruit, meaning each individual berry is made up of around 100 tiny, individual fruits called drupelets. You’ll also find that raspberries have style, and we’re not just talking aesthetics. Each berry has tiny hairs called styles that help the seeds to spread and propagate in the wild.

As the weather heats up, nothing could be more perfect for lunch than a great salad boasting these beauties. Join us for lunch al fresco this week and we can guarantee that you’ll be quite delighted.

Squash Party

Posted by christina on 06/22/2011

Summer is one of the most exciting times in the MIHO kitchen because our favorite produce ingredients are now in season. The beautiful squash blossoms we featured a few weeks ago have since matured, and now our friends over at Suzie’s and Crow’s Pass are harvesting squash of all shapes and sizes. This week, we’re bringing the season’s bounty to you in our Summer Squash Sammy.

There are multiple varieties of squash that fit under the summer squash category, each with their own distinctive look. Patty Pan or Scallop squash is known for its fluted edging, while Crook Neck squash is named for it’s thin, curved neck. There’s even an 8 Ball squash named for its likeness to the pool ball. Despite their different outfits, all summer squash are harvested before they harden into gourds, allowing their flesh, seed and skin to be fully edible.

Whether green, yellow, skinny or round, these summer squash are ripe and ready to show off their true colors. We look forward to sharing some of the best summer has to offer with you and we’ll see you on the street.

Gettin’ Piggy With It

Posted by christina on 06/19/2011

This past week has been the best 1st Birthday we could have ever asked for, and we owe it all to our HOMI’s who made it out to show their love and party with us! We brought back the Cochinita Pibil Tacos for this past week’s celebration, and we’re happy to report that it’ll be on the menu for two more weeks.

Cochinita pibil originally comes from the Yucatan Peninsula of Mexico. It starts off with marinating the pork in citrus and achiote, which we make ourselves in-house. Then we wrap it in banana leaves and slow roast it to perfection. This particular recipe is truly a labor of love and it all begins right at the source.

All good recipes start with great ingredients and at the heart of the cochinita recipe is pork shoulder (aka pork butt), sourced from Vande Rose Farms, based out of Iowa. Their breed of choice is the Duroc pig, which is a 175 year old American breed, known primarily for its intense rosy colored meat, juiciness, and natural marbling qualities. The farmers take great pride in raising these pigs naturally, without antibiotics, and keep the pigs on a 100% vegetarian diet comprised of corn and soybeans. These well-raised pigs make for a great finished product, but don’t take my word for it. Come by and have a taco or two, or three and get piggy with it!

I Got The Blues

Posted by christina on 06/12/2011

This week is very special, as we are celebrating our very first birthday! In honor of our birthday, we are bringing back a few HOMI favorites to the menu, and we’re also bringing something new and blue to the table. On this week’s menu, we’re serving up an awesome Blueberry Spinach Salad, which features the tastiest blueberries we’ve ever had from De Luz Blueberries in Temecula.

Blueberries are one of the very first indigenous foods of the US, first gathered by Native Americans in the wild. It is one of the only naturally occurring blue foods, aside from blue cheese, blue corn, and a few others. As well as being super delicious, blueberries are a great health food, boasting one of the highest levels of antioxidants of all fruit.

It’s amazing that a year has gone by already, and we can’t wait to celebrate with all of our HOMI’s. So this week, we encourage you to join us, grab a bite, and party till you’re blue in the face!
